I love my crock pot, recipe #1.

I'm calling this one.... I love my crock pot and the friend that gave it to me.  I work part time... in a very service oriented business and what I love so much  are the friendships along the way.  I really get to know people,  and they me.  So when my old boss figured out she had been storing a crock pot forever and had never used it once.... she gave it to me.  Love that gal.  I think it's because she saw my kids acting like this.....  and felt sorry for me. 


 Kristi totally needs a break, she thought.... I think I'll make her life a little easier and give her the crock pot.  And it has.  And thank you.  But the kids still act like that. 

Today I taught 3 classes, speed cleaned the house, went to the grocery store and stood behind the lady in the express lane that wanted to do a price check on something that the store had to search for .... oh, for about a million hours,.... while my ice cream melted.  (And I went to Stein Mart to see if they had anything cute I couldn't live without.  Before I bought ice cream.) 

So when I came home and still had nothing to fix for dinner, and found the leftover ham in the fridge... and the gift of a crock pot.... here's how it all worked out.  So easy and the kids actually eat it which is worth all the, um,..... 5 minutes I put into the prep. 

Try it.... (the recipe can use potatoes or hash browns.  I chose hash browns because the last time I peeled potatatoes and didn't know not to put the peels down the disposal.... my husband thought about leaving me for a woman that doesnt cost him a fortune in plumbing costs. So frozen hashbrowns keep me a happily married woman.)  And today the kids will be amazed and in awe at the great dinner on the table.  And then wonder why I can manage THAT, but can't get out of my sweaty aerobics clothes all day.  One of life's many questions. 


Cheesy Hashbrown Casserole W/Ham  (thanks to Mommy's kitchen.net)

Ingredients:
1 - (26 oz) bag frozen, shredded hash brown potatoes
1 - 8 oz container sour cream
1 - 10.5 oz can cream of chicken soup
1/2 - cup butter, melted
onion, chopped fine (about 1/2 a small onion)
1 lb cubed ham
1 1/2 cups shredded cheddar cheese (or a bit more if you like)

Directions: 
Stir all the ingredients together. Place into a lightly greased casserole dish (9 x 13 in). 
This is optional but you can add a bit more cheese on top if you like. 
Bake at 350 degrees for 45 min - 1 hour. .

Crockpot Directions: Coat the inside of a slow cooker with cooking spray or butter. Spoon the hashbrown mixture into the slow cooker. Cover, and cook on High for 1 1/2 hours, then reduce heat to Low, and cook for an additional 2 1/2 hours.

    1. I plan to throw it at them somewhere between school, baseball practice and Ethan's workout at the Y. Thinking if I give them a spoon they can balance it better in the car. Less mess.
